Significant time and space is required to collect seed from the beetroot family so this is only advisable for people with a lot of garden space. Plants from the beetroot family will cross pollinate so only allow one variety to go to seed at any one time. To ensure viable seeds allow at least 5 plants of that variety to go to seed, but ideally to preserve heirloom genetics its recommended you have 30 plants going to seed within close proximity. Plants in this family are biennial so will require two growing seasons to produce seed. Seeds form on a stalk, ripening from the bottom up. Allow to completely dry on the plant before harvesting and storing. Seeds in this family will remain viable for at least 2 years.
